Just A Weekly Update

Hello friends! This past week has been well, a week. Some mentionable highlights include stuffed bell peppers, veggie protein patties, meatless meatloaf, crockpot squash spaghetti, getting our Christmas tree, taking some steps towards progress with our finances, sticking to good habits slightly better, investing in friendships more intentionally, changing birth control methods to see if going hormone-free is going to help my migraine, and soaking up the little sunshine in between the rainy overcast days.

Some not-so-mentionable lowlights that I’m going to share anyways because it’s real life include a batch of experimental granola bars that were just okay, experiencing grace while I’m still figuring out helping out with the powerpoint at church, and the usual laundry-and-dishes and real life stuff inbetween everything else (also noteworthy is the smallest banana slug I’ve ever seen).

Christmas season is here and it’s such a wonderful time full of joy and all things cold and cozy, but it can also be a super stressful season and challenging for a lot of people. Wherever you find yourself on the spectrum from grinch to Christmas caroler, I hope you are filled with love and share it with those around you!

    Can I get the recipe for the stuffed peppers? Really liked your recent post.


    1. Of course! They’re so simple and easy.

      1. Preheat oven to 375. Cook quinoa and frozen corn and set aside. 2. Sautee cauliflower rice, garlic, and onions in a pan until lightly cooked.
      3. Mix everything together and add a can of black beans, parsely, taco seasoning, lemon juice, and salt and pepper.
      4. Rotate bell peppers over a stove flame for added flavor. Cut the tops off, fill with mixture, and bake for 20 minutes.

      I’m so glad you and mom are trying out some new plant-based dishes! Let me know how it goes.

    Katie your peppers look awesome! I made a cauliflower pizza crust this week and I would recommend it? I used goat cheese, Rosemary, mushroom and Canadian bacon.
